We work with pork raised in different regions, including Yoka Pork and Kyotamba Pork.
Curing slowly, allowing flavor to develop.
We blend salt, spices and herbs, then allow the pork to cure slowly. This is how we bring out the natural flavor of our handcrafted bacon.

Our craftspeople consider the wood-chip blend, temperature and humidity, carefully smoking each batch.
